Peanuts are usually roasted but will be labeled raw if they are.
Most other nuts in the shell are raw. They may have been dried but not at temps. that would constitute roasted . That would change the flavor dramtically.

No. They have been heated and dried. My father-in-law used to do it with a box with heat lamps on it. He would dry out black walnuts. Kind of like a heated dehydrator. They have to say raw if it's raw. Things like cashews are poisonous if raw (or so I've read). If I'm wrong, someone please correct me.

I don't think most are. Majority of companies have them roasted. I would think it's to kill off most bacteria if there is any.

nope, they are dry roasted- otherwise you wouldn't get that cracking open effect. Eat and enjoy!
