Hi,

I'm making a chicken broth right now. Aside from a whole chicken, I tossed in two large carrots, two small onions, some garlic, a leak and salt.

I usually put the chicken in the over for a little while just to crisp it up afterwards and use it to make club sandwiches and the likes.

Any ideas how I can use the roughly chopped veggies in there as well? I'd hate to throw them out. I'm going to freeze the broth for later use so I can't eat them in my soup...

Rli R: LOL, absolutely!! I can't stand throwing out food, I always try to find a way to re-use every little scrap. I wonder if I can mash them up and make baby food... I don;t think they mind bland but the garlic and onions might be too much...

You sound like me. I HATE to throw out food. But I'll tell you. If you've done your broth right, those veggies have given their "All" to the broth. Their minerals and flavor are all gone. I know I would love to use them in another soup but they just don't have it in them. Sorry, tossing is your only possibility unless you're willing to take flavorless. If you want flavorless, you could mash them, mix with mashed potatoes and eggs and make mashed potato patties. (See, I'm STILL trying to find a way to use them!!)

They do not have any flavor after this. Best thing to do is throw them outside to your furry little friends that live outdoors and say sorry that they do not have much taste. But I am sure they will not mind.

Add some biscuits and make a chicken pot pie (save a little of the chicken too!)
