I have made all of these & they are all good!!!!!!!

Bagel & cheese bake-----easy & yummy

INGREDIENTS
1/4 pound bacon, diced
1/4 cup chopped onion
1-1/2 plain bagels
1/2 cup shredded sharp Cheddar cheese
6 eggs, beaten
1 cup milk
1 teaspoon chopped fresh parsley
1/8 teaspoon pepper
1/4 cup grated Parmesan cheese


DIRECTIONS
Place the bacon and onion in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside. Slice each bagel into 4 thin slices.
Arrange 6 bagel slices in the bottom of a lightly greased 9x13 inch baking dish. Cover with the bacon and onion mixture, followed by the Cheddar cheese. Top with remaining bagel slices.
In a medium bowl, whisk together the eggs, milk, parsley, and pepper. Pour the egg mixture over the bagel layers. Cover, and refrigerate 8 hours or overnight.
Preheat oven to 400 degrees F (200 degrees C). Uncover the chilled bagel dish, and bake in the preheated oven 25 to 30 minutes, or until eggs are firm. Sprinkle with Parmesan cheese, and serve warm.

Sausage casserole

INGREDIENTS
1/2 pound sage flavored breakfast sausage
1-1/2 cups shredded potatoes, drained and pressed
2 tablespoons butter, melted
6 ounces mild Cheddar cheese, shredded
1/4 cup onion, shredded
1/2 (16 ounce) container small curd cottage cheese
3 jumbo eggs


DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.
Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.

Baked french toast

INGREDIENTS
1/2 (1 pound) loaf French bread, cut diagonally in 1 inch slices
4 eggs
1 cup milk
3/4 cup half-and-half cream
1 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
1/4 cup and 2 tablespoons butter
2/3 cup brown sugar
1 tablespoon and 1-1/2 teaspoons light corn syrup


DIRECTIONS
Butter a 9x13 inch baking dish. Arrange the slices of bread in the bottom. In a large bowl, beat together eggs, milk, cream, vanilla and cinnamon. Pour over bread slices, cover, and refrigerate overnight.
The next morning, preheat oven to 350 degrees F (175 degrees C). In a small saucepan, combine butter, brown sugar and corn syrup; heat until bubbling. Pour over bread and egg mixture.
Bake in preheated oven, uncovered, for 40 minutes.

Breakfast casserole

INGREDIENTS
1 (10.75 ounce) can condensed cream of chicken soup
1 (16 ounce) container sour cream
1 (2 pound) package frozen hash brown potatoes, thawed
1 cup cubed, cooked chicken meat
1 cup diced ham
1 onion, chopped
3/4 cup shredded Cheddar cheese
1 cup crushed potato chips
1/4 cup butter, melted


DIRECTIONS
Combine undiluted soup, sour cream, hash browns, cubed chicken and ham, onions, and cheese. Pour into a lightly greased 9 x 13 inch pan.
Bake at 350 degrees F (175 degrees C) for 30 minutes. Top with crumbs, and drizzle with melted butter or margarine. Bake for another 15 minutes.

Southwest Breakfast Casserole Recipe #142184
A great way to feed a hungry crowd for breakfast, this can be made ahead and put in the oven right before your guests arrive. Also great for Potlucks!

6 slices white bread, crust removed
1 lb pork sausage
4 cups Colby or Monterrey jack cheese
6 eggs
2 (4 ounce) cans diced green chilies
1 teaspoon salt
1 teaspoon dry mustard
2 cups half-and-half
butter or margarine, softened

1. Lightly butter both side of bread slices and place in 9x13-inch baking dish.
2. In nonstick skillet, over medium-high heat, brown beef sausage; drain well and pat with paper towels. Sprinkle sausage over bread slices.
3. Sprinkle cheese over sausage. Follow with a layer of chopped green chilies.
4. In medium bowl, beat eggs lightly. Add salt, dry mustard and half-and-half. Mix thoroughly. Pour over casserole.
5. Cover with foil and refrigerate overnight.
6. To bake, preheat oven to 350°F and bake casserole 45 minutes, or until bubbly and lightly browned. Allow to stand 15 minutes to set. Cut into squares and serve with picante sauce on the side.

Breakfast Burrittos: I make this few times a month but i add Tablespoon mayo also
My servings sizes are usually for 10

16 min 13 min prep

1 lb rolled pork sausage (mild)
1/2 cup yellow onions (diced)
1/4 cup fresh tomatoes (diced)
1 tablespoon green chilies (diced those in a can)
10 (8-9 inch) flour tortillas, shells
9 eggs (2 cups)
10-12 slices American cheese
favorite taco sauce or picante sauce

< 30 mins Breakfast

Crumble and fry pork sausage, stir and separate meat so it will fry in small little pieces.

Remove from heat drain and rinse with hot water, drain water from sausage.

Place drained sausage in fry pan add onion, green chili's and tomatoes, heat on medium temperature just until sausage and vegetables are heated through, stir frequently.

Measure 2 cups of eggs and beat. In large fry pan scramble eggs as usual.

Before eggs are completely cooked add 1/2 cup sausage mixture and stir. When cooked remove from heat.

Cover and store the sausage that is not used and refrigerate.

It will keep for several days for your next breakfast.

In the middle of one flour tortilla shell place one slice of cheese in the middle.

Spoon one - two tablespoons of the egg mixture and roll up the shell.

Place on platter and cover with plastic and pop in microwave just long enough to heat and melt cheese.

Serve with your favorite taco or picante sauce. You will find these are milder and relay great for breakfast. I like to place sour cream and little avocado in mine.

I try to make breakfast for my family every day, and I try to get in as many food groups as I can. Today, we had oatmeal(on the stove, not nuked) with brown sugar, maple surup and pecans, some apple slices, and ice cold milk.
sometimes we have fried (with pam) egg whites, orange wedges, and whole grain toast. Tomorrow, it's mini bagels with cream cheese, turkey sausages(heat and serve-so easy),and canteloupe cubes.I think breakfast can be so fun and creative. Try out fresh fruits and veggies that you see in the grocery store. Either slice them in strips to eat cold, or chop them small and fry them with some egg whites for an awesome omellette!Whole grains are so good to get your body going, as well as protein, so there is so much potential there.

Omelette.
1 Egg.
1T Milk.
1t butter.
Grated Cheese.
(I)
Whisk together the egg and milk. Melt butter in a small fry pan and add the egg mixture, swirling to cover the pan.
(II)
When the omelette is almost set sprinkle on the filling.
Fold in half and cook for a further 1 minute.
Slide out onto plate.

Toast with butter and scrambled eggs with coffee or tea.

Saute onions and bell peppers in some butter. Add beaten eggs and black pepper, stir and enjoy! You can also add shredded cheese to it.
