DEEP-DISH MIXED FRUIT CREAM PIE

This variation of a Southern deep-dish apple pie substitutes mixed fruits, adding cream to achieve a fuller consistency. Serves 8.

1 unbaked 10-inch pie crust
2/3 c. granulated sugar
2/3 c. brown sugar, firmly packed
1/4 c. cornstarch
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. lemon zest
1 1/2 c. pitted red cherries (canned or frozen)
1 1/2 c. peaches (canned or frozen)
1 1/2 c. apricots (canned or frozen)
1 1/2 c. pears (canned or frozen)
1 pt. whipping cream

Preheat oven to 400 degrees. Combine sugar, brown sugar, cornstarch, cinnamon, nutmeg and lemon zest. In a large bowl, mix together cherries, apricots, peaches and pears. Combine sugar mixture with fruit mixture. Whip cream until thick and fold into fruit/sugar mixture. Pour into 10-inch pie plate. Top with single crust pastry. Make slits in pastry so steam can escape. Bake 50 minutes. Serve warm with ice cream.


DEEP DISH LEMON MERINGUE PIE

2 c. cold water
1 1/2 c. sugar
1/3 c. cornstarch
1/4 tsp. salt
3/4 stick pure butter
3 tbsp. grated lemon rind
3 lg. eggs, yolks only (save whites for meringue)
Juice of 3 lemons or 1/2 c. lemon juice concentrate
Baked deep dish pie shell

Mix corn starch with 1/2 cup cold water. Blend sugar and salt. Add remainder of water. Stir mixture well gradually over low heat until mixture comes to a boil. Increase heat and gradually add beaten egg yolks. Cook 3 minutes longer. Remove from heat adding butter last and lemon rind and lemon juice. Stir constantly. Mix well and pour into deep dish baked pie shell. Let pie cool before topping with meringue.

MERINGUE:

3 egg whites
1/4 tsp. cream of tartar
1/2 c. sugar
1 lg. tbsp. vanilla extract

Mix all ingredients together and beat with mixer until egg whites are stiff. Spoon over deep dish pie and brown meringue in oven for 5 minutes until golden brown.


DEEP-DISH SHRIMP PIE

1 1/2 lb. shrimp
4 tbsp. butter
2 c. chopped onions
4 ribs celery, chopped
1 green pepper, chopped
1 (16 oz.) can stewed tomatoes
Salt and pepper
1 tsp. chives
1 1/2 tsp. basil
1 tsp. Tabasco
1 can tomato paste
Pastry for deep-dish double-crust 10-inch pie

Peel shrimp. This can be done most easily after a brief bath in boiling water. Heat butter in skillet. Add onions and cook until clear. Add shrimp, celery, green pepper, stewed tomatoes, salt, pepper, chives, basil, Tabasco and tomato paste. Simmer, stirring continually for 5 minutes. Line 10-inch deep dish pie tin with pastry and pour in shrimp mixture. Cover with remaining pastry. Make vent holes in top crust. Cook in reflector oven for approximately 30 minutes, or until crust is browned. Serves 6.

DEEP DISH APPLE PIE

10 med. size apples (Mcintosh or Granny Smith), sliced, about 10 cups
1/3 c. granulated sugar
1/3 c. firmly packed light brown sugar
3 tbsp. flour
1 tsp. ground cinnamon
1/4 tsp. ground cloves
1/4 tsp. ground allspice
2 tbsp. butter
Water
1 tbsp. granulated sugar

Combine apples, brown sugar, and 1/3 cup of granulated sugar, flour, cinnamon, cloves, and allspice in a large bowl; toss lightly to mix. Let stand while making pie crust.
Preheat oven to 425 degrees. Place pie crust in a deep pie plate. Spoon apple mixture into the pie plate and dot with butter. Cover with pie crust. Fold edges of crust under, flush with sides of dish. Pastry should be inside dish.

Brush lightly with water. Sprinkle with remaining 1 tablespoon of sugar. Bake in a preheated oven at 425 degrees for 45 minutes or until pastry is golden and juices bubble up. Place a piece of aluminum foil on the rack under the pie to catch any juices that may run over. Serve with vanilla ice cream.

This isn't a 'fruit' deep dish pie... it's more of a savory than a sweet. But it is still a pie that needs a real deep dish. It's pure heaven... make one, you'll see. Use it for leftover turkey from Thanksgiving. yum!

HOT CHICKEN SALAD PIE

2- 9” Baked Pie Shell, baked light brown
3 C. Chicken or Turkey White Meat,
cooked and diced
1 C. Celery, diced
4 Green Onions, chopped fine
1 C. Cheddar Cheese, grated
1 (7 oz) can Crushed Pineapple, drained well
3/4 C. Almonds, sliced & toasted
Juice of one lemon
1 and 1/2 C. Real Mayonnaise

Additional 1/2 cup grated cheese and 1/4 cup sliced toasted almonds.

Mix all ingredients together and put into baked pie shells. Sprinkle the additional 1/2-cup of grated cheddar cheese and 1/4 cup slice almonds.

Bake 45 minutes in 325 degree oven until cheese is melted and pie is warmed all the way through.


This was the specialty of the Cafe at our local Art Museum. Whenever they had this on the menu... the place was packed and they sold out within an hour everytime.

Deep Dish Berry Pie

Serves 8.

3 cups fresh blueberries, washed and drained
2 cups fresh red raspberries
1 cup fresh black raspberries
2 cups fresh strawberries, washed, hulled, and halved if large
2 tablespoons fresh lemon juice
1 teaspoon finely minced lemon zest
1/3 cup blackberry brandy
2 tablespoons all-purpose flour
1/4 cup tapioca
3/4 cup granulated sugar
1 sheet frozen puff pastry, thawed according to package directions
1 egg, beaten with 1 tablespoon water

In a large bowl, combine all of the berries. Sprinkle with the lemon juice, zest, and brandy. Toss gently to coat.

In a small bowl, combine the flour, tapioca, and sugar, and toss the mixture gently with the fruit. Pour the berry mixture into a 1 1/2 quart ovenproof baking dish, and set it aside.

Meanwhile, on a lightly floured surface, roll out the pastry to 1/8 inch thick. Use a sharp knife to cut out a circle about 2 inches larger than the baking dish. Brush the circle lightly with the egg wash. Place the pastry, wash side down, over the berry filled baking dish, and stretch it tight, like the head of a drum. Press the overhanging dough against the sides of the dish; it should adhere all around. cover and refrigerate for 1 hour.

Preheat the oven to 450 degrees F.

When ready to bake, brush the top with egg wash and bake for 15 minutes; reduce the heat to 375 degrees F and bake for 25 minutes longer, or until the crust is golden.

Do not open the oven door for the first 20 minutes or the pastry may fall.

Remove the dish from the oven and place it on a wire rack to cool slightly. Serve warm or at room temperature.

NOTE: The combinations of berries can vary according to taste and availability, but in any case should equal 8 cups.

Deep-Dish Apple Pie

4 lb. Granny Smith apples, peeled, quartered, cored
1 lemon, zested
1 orange, zested
2 Tbsp. freshly squeezed lemon juice
1 Tbsp. freshly squeezed orange juice
1/2 cup sugar, plus 1 tsp. to sprinkle on top
1/4 cup all-purpose flour
1 tsp. kosher salt
3/4 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/8 tsp. ground allspice
Doulbe pie crust
1 egg beaten with 1 Tbsp. water, for egg wash

Preheat the oven to 400º F.

Cut each apple quarter in thirds crosswise and combine in a bowl with the zests, juices, 1/2 cup sugar, flour, salt, cinnamon, nutmeg, and allspice.

Roll out half the pie dough and drape it over a 9- or 10-inch pie pan to extend about 1/2-inch over the rim. Don't stretch the dough; if it's too small, just put it back on the board and re-roll it.

Fill the pie with the apple mixture. Brush the edge of the bottom pie crust with the egg wash so the top crust will adhere. Top with the second crust and trim the edges to about 1-inch over the rim. Tuck the edge of the top crust under the edge of the bottom crust and crimp the 2 together with your fingers or a fork. Brush the entire top crust with the egg wash, sprinkle with 1 teaspoon sugar, and cut 4 or 5 slits.

Place the pie on a sheet pan and bake for 1 to 1 1/4 hours, or until the crust is browned and the juices begin to bubble out. Serve warm.

DEEP DISH HAMBURGER PIE

1 lb. ground beef
1 sm. onion, chopped
1 can condensed tomato soup
1 can whole kernel corn
1 can sliced carrots, drained
1 tbsp. chili powder
1 tbsp. blackened steak magic
1 1/2 garlic cloves, chopped or 1 tbsp. garlic powder
1 (10 count) can refrigerated biscuits

Preheat oven to 400 degrees. In large skillet over medium heat, cook ground beef, onion and garlic clove. Cook until onions are tender. Drain excess fat. Add remaining ingredients and place mixture in casserole dish. Place biscuits around sides of dish. Cook 15 minutes or until biscuits are done (lightly brown).

This is almost the same as mine, except I use pre rolled flakey pastry sheets.

********DEEP - DISH PECAN PIE
1 (9-in.) deep dish unbaked pie shell
3 eggs
1 c. dark corn syrup (may use light corn syrup)
1/2 c. sugar
1/4 c. butter
1 tbsp. vanilla
1 ½ c. pecans (may use walnuts)

Preheat oven to 350 degrees. Beat eggs with whisk in medium bowl. Mix in corn syrup, sugar, butter and vanilla until well blended.
Spread pecans on bottom of pie shell. Pour egg mixture over pecans SLOWLY.
Bake 1 hour. Cool and serve. It's very good!
