when the inside of your broccoli steam is brown? like a little circle that goes all the way up until they branch off.

Not going to get all into the chemicals and minerals here, but usually there is a reaction going on inside of the broccoli. That is one of few signs that it's about to go bad.

It means that its got a bit rotten. It is still okay to eat, but many of the vitamins and minerals from that area are gone.

the crown was grown on an old plant.. many plants leave the core grow open to place more energy and nutreints in the growing (cambria??) cells.. Like bamboo
just trim it off if it bothers you
your going to boil or steam it to 212F ????

It's going past it's best .......... always buy broccolli thats stems are whole with no holes in ..... It also needs to be "very" green with no yellow/brown florets.

This is a fungus that is contracted when the soil around the plant is tainted...

i think yo mean stem instead of steam.
and it means it's rotten and it's home now is in the trash

It was harvested too late it's overgrown just trim it.
