Just for one person. I have 1 large potato and 3 of those little ones. I also have butter, bacon, swiss cheese, sour cream, onions, garlic, and some other stuff. I dont want a baked potato, unless its different than the normal.

You can mash your potatoes (after boiling of course)
Here are a couple of options for add-ins that I've tried -

1 oregano, diced tomatoes, bacon
2 onion. sour cream
3 sauteed onions and mushrooms
4 butter, garlic
5 bacon and swiss cheese
6 sour cream and bacon

You can bake your potato, scoop out the pulp and mash it with butter, sour cream, bacon, little salt . Put it back in potato, top with cheese and bake about 10 min to melt cheese and heat through. Twice baked Potato

My favorite-easiest too

dice potatoes - large pieces(with or without skin-your preference) if small pieces, takes less cooking time
dice onions and bell pepper
Toss all with olive oil (very well coated). Add salt, garlic powder and onion powder.
Throw in pan and bake at 400 about 45 min, turning once.

make scallopped potatoes!

1.) slice up the potatoes into thin slices
2.) slice up the onion into thin rings
3.) chop up the bacon (50-100g)
4.) grate 50-100g of swiss cheese

Preheat oven to medium (180C).
in a ovenproof dish (e.g. glass pie dish, corningware casserole dish) which is not too big, lay out some potato slices in single layer. Scatter with onion rings. Sprinkle salt and black pepper. continue layering with potato, onion, S+P, potato, onion etc until all used up (last layer should be potato).

Cover and cook in the microwave for 7 minutes. Sprinkle the finely chopped bacon and cheese on top. Bake in the oven for 10 minutes (or you can use the grill to brown the bacon and cheese).

Variations: you could add sour cream in the layers if you like but I find it rich enough without. Also you could mince the garlic and put with the onions but again I think it's rich enough. If you are using a glass dish you might want to grease it before the first layer with the butter.

TWICE BAKED POTATO CASSEROLE

Bake your potato - the large one since you are making it for one. While the potato is cooking, saute the onions and garlic in butter until tender and set aside. Chop the bacon and cook until it's almost crisp. Set aside. When the potato is done, mash it - skin and all, tearing the skin apart if it tries to stay as one piece. Add the butter, salt and pepper and mix well. Add the onion/garlic mixture, the cooked bacon, the sour cream, shredded swiss cheese (cheddar if you have it too). If you have any chives or dried chives - toss them in too. Mix well and place in a casserole dish. It's best at this point to refrigerate for at least 2 hours to meld the flavors. Then bake in preheated 350º oven for 40-45 minutes or until hot and bubbly. Enjoy!

Use your ingredients to make mashed potatoes sauteing the onion and garlic in a little butter before adding them to the potatoes. The sour cream can replace the milk and grate the cheese before mixing in. Top with some extra cheese and bacon.

Mash the potatos and add all those ingredient that you named, except for cheese and sour cream. Whipped them together and top with the cheese and sour cream. Sprinkle with bacon.
