I like to cook healthy meals for my family but it always seems to involve chicken, potatoes, carrots and broccoli cos its the kids favourite, would u believe they hate chips!!! so if i dont do chips i do mash or baked potatoes im in such a rut any ideas??

Vegetable Medley with Crispy Topping ??

Assorted par boiled veg .... carrots/broccolli/ swede/turnip/green beans/sprouts even pumpkin. Make up a basic white sauce and cover veg ....... cover that with fresh brown/white breadcrumbs and a sprinkling of cheese a tasty cheddar or bousin (garlic) and bake till crusty and yummy .... you can also make this with seafood just add some tomato puree to the sauce.

I can relate to the rut you are in. I get so sick of potatoes and chicken! I watch Rachel Ray 30 minute meals when I get stuck. There is usually one thing on each show that I would try. Or I ask my mom. Last time I made a roast I called to ask her advice about cooking times and she suggested I make roasted potatoes and asparagus to go with it. You just cube the potatoes and mix them up with a veggie and drizzle with olive oil, then bake at 425 near top of oven or broil 'till tender. If your kids are picky you can mix ranch dressing mix (just the seasoning packet) in with the oil and it will be tasty for them. healthy too. search for "chicken picatta pasta toss" on foodnetwork.com. That's one of my favorites to make except I substitute canned artichoke hearts for the capers at the end of the recipe. capers are expensive and unnecessary.

You can make healthy meals with other meats too. My hubby was on a low-fat/low-cholesterol diet for heart disease and then on a diet for borderline diabetes (low-carb diet). I fixed healthy for him on both diets and yet the word healthy took on different meanings depending on which diet he was on and what was healthy to that illness.

You can cook rice, noodles - in place of potatoes if you aren't on a low-carb diet. You can have your meats - any kind - but try to stay away from fried - on either diet - just limit the amount on the low-fat/low-cholesterol and remove the fat before cooking. You can cook the chicken with the skin on if just baking it - to hold in the moisture - but remove before eating. If you season, you'll lose all the seasoning when you toss the skin so coat the chicken with something like yogurt and crushed cereal when you add seasonings - those will hold in the moisture when you bake it. You can layer in the casserole dish broccoli, a layer of chicken, a can of low-salt cream of whatever soup (chicken/mushroom) - undiluted with some low-fat mayo (1/2 c), curry (1 tsp). Spread on the chicken. Then top with shredded cheese (cheddar or cojack) (1 cup)- low-fat if your diet leans that way otherwise use normal (normal is lower carb than low-fat is). Sprinkle with dried bread crumbs and dot with butter. Bake 350º for 20 minutes or until hot and the cheese has melted.

Try to include fish in their diets - it prevents so many illnesses and supplies the good fats that help the brain. For salmon, you can bake in foil with some dill and onion powder, surrounding it with either water or milk. Ladies in my rubber stamp group like my salmon with 1 T lemon juice, 2 T butter and 3 T brown sugar, mixed well and melted - spread over the top of the salmon. The diabetic ladies in the group like mayonnaise spread over the top of the salmon, sprinkled with onion powder and dill. Kids would probably like the sugar one the best. I got that recipe when I went to Juneau, Alaska to a buffet. It was very good.

next time you have fresh potatoes wash them really well before you peel them for your mashed potatoes, fries or whatever.. as u peel try to cut the skin in to nice size strips.. take these strips soak them in cold salt water.. for about 10 mins then fry up my son love thems he calls them tater skin fries...

but his favorite mashed potatoe dish...

take make your mashed potatoes (box or fresh) while still warm add about 4 oz if cubed velveta cheese... add garlic powder, onion season, salt and peper stir... put in a 9 x 13 baking dish... in a skillet brown 1 1/2- 2lbs of ground lean beef or ground turkey.... when brown drain any extra 'fat' there may be.. add one can or jar of favorite speggetti sauce..add mushrooms.. i u like them.. pour on top of taters.. top with shreadded cheese... .bake at 350 degrees for about 20 mins and serve with garlic bread...
