margerine, shortening, oil, prune puree or applesauce. Depending on what you are using it for...
1 stick of butter or margerine equals 1/2 cup or 8 tablespoons or 24 teaspoons. Just use it the same way.

If you use vegetable oil, for every 1/2 cup butter use 1/4 to 1/3 cup oil.

Use a solid shortening rather than the oil. Oil will give you a softer dough since it will provide more liquid to the recipe than what is called for. If you add more flour to adjust for the oil the cookie will be tough. So given the option crisco or if you have margarine that would be better taste wise as the crisco will give no flavor. If you have to use the crisco add a bit more vanilla extract and if you have almond extract use some of that as well.

Depends on what you're cooking. If you're cooking a savory dish then olive oil is fine. If you're cooking a sweet or baking then use veggie oil.

1 stick of butter is equal to 1/2 cup. Olive oil is healthier for you so I would use that.

You should consider just using butter. Especially if you are baking. Your results could be questionable if you substitute a liquid for a solid fat. Stick margarine will work but all that trans fat isn't good for you. Well neither is butter but at least it tastes good and you only live once.

Don't forget lard. I know it's not very popular these days, but it is great in baked goods. Substitutes butter or shortening in equal amounts.

Will depend on the context really. Which is better as a snack - fresh fruit personally. It's tastier and gives you that tad of sweetness. Which can be better as a snack if you are trying hard to lower back on sugar and lose weight vegetables
