The mommies group that i am in is having a Halloween Potluck... I'm wanting to bring something that will be easy for me and easy for everyone to eat... I was thinking about making buffalo balls... like buffalo wings but in a round shape and boneless... i want other ideas though anyone?

I have a lot of beef Id like to get rid of so something with beef would be good.

Rachael Ray made this on her show the other day and it looked delicious. It has kind of a lot of ingredients but seemed easy enough. Its' called Italian Shepherd’s Pie. I posted the link to the recipe below. You could use the beef instead of ground turkey.

Sweet Salsa Meatballs
These meatballs have an unoriginal sweetness to them that will catch any body's mouth happily by surprise.

Ingredients:
2 lbs ground beef
2 eggs
1/2 cup bread crumbs
1 cup brown sugar
1 jar salsa
1/4 tsp salt
1/4 tsp pepper
1/4 tsp basil
Olive oil
1/4 tsp garlic salt1/4 tsp minced onion
Method
Mix beef, eggs, bread crumbs, 1/4 cup brown sugar, 1/4 cup salsa, salt, pepper, basil, onion and garlic. Use small cookie or melon baller to scoop small amounts of beef mix and roll in hands to make uniform in size. Do this until all mix is used. Heat a skillet on stove top or electric skillet could also be used (250-300 Degree F). Drizzle a little olive oil in pan on medium heat. Add the rest of salsa from jar and brown sugar. Stir until well blended while continuing on medium heat. Add small meatballs gently to sauce pan and cover. Cook on medium heat for about 20 minutes and until centers are completely cooked.

I got about 50 little meatballs. Everyone loved the different sweetness of these little treasures and they were so easy. I'm sure you could make ahead and freeze until ready to use. You could also cook them as directed and freeze. Then they will only need to be heated through for a quick and easy appetizer for unexpected company.

Number of servings: 10-12 servings

This will help use your beef and will be in the theme of your party. I make this Taco pie in my pizza pan, layering everything and serving with tortilla chips. Since the color is orange-ish, I use olives and bell pepper for the eyes and mouth. You can also use pieces of the olives for the "stem" on the pumpkin. Here's the recipe - it's very good.

TACO PIE

1 large can refried beans
1 1/2 lbs hamburger
1 small can diced green chiles
1 pkg shredded cheddar cheese
2/3 c taco sauce
1 pkg taco seasoning

Line pan bottom with refried beans. Cook hamburger - drain - add pkg of taco seasoning and mix well. Spread over the beans. Spread chilies over the hamburger. Sprinkle cheddar cheese over the chilies. Pour taco sauce over the cheese. Cook in a 400º oven for 20 minutes. You can even use dollops of sour cream for the eyes with the black olives around it. Serve with tortilla chips.

Sounds like fun! Buffalo balls sounds great...
Well, if your looking for beef ideas and you want to keep it Halloween themed, try making some meatballs, then after plate, place a black olive slice on each and red lines to make Meaty Eyeballs. They can be eaten with toothpicks.

Trick or treat turnovers-

1/2 pound ground beef
1 tablespoon finely chopped onion
4 ounces mozzarella cheese, cubed
1/4 cup prepared mustard
2 tubes (16.3 ounces each) large refrigerated flaky biscuits
1 egg, lightly beaten

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add cheese and mustard; cook and stir until cheese is melted. Cool slightly.
Flatten each biscuit into a 4-in. circle; place four biscuits in each of two greased 15-in. x 10-in. x 1-in. baking pans. Spoon 2 heaping tablespoons of meat mixture onto each.
Using a sharp knife or cookie cutters, cut out jack-o'-lantern faces from remaining biscuit circles; place over meat mixture and pinch edges to seal tightly. Reroll scraps if desired and cut out stems for pumpkins.
Brush with egg. Bake at 350° for 10-15 minutes or until golden brown. Yield: 8 servings.

Or if you want to go easier, make hamburgers, place burger on bun, top with slice of cheese, cut jack o lantern face in cheese. Leave top off for each to top their own. Don't forget the blood (ketchup)
