You can clean the seeds and roast them. They are very good, kind of like sunflower seeds.

You can use the flesh of the pumpkin if you are making a halloween pumpkin. Just get a good spoon and scrape the flesh away from the skin. This is what my friend and I did.
We then made pumpkin pie with it, and have loads left over for pumpkin soup and perhaps even a beef and pumpkin stew!
We are also drying the seeds - we thought we might toast them and then use them in salads and things, or on our breakfast muslei!

1 cup pumpkin seeds
1 tablespoon melted butter or vegetable oil
1 tablespoon granulated sugar, or more, to taste
1/2 to 1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon allspice
PREPARATION:
Rinse seeds well and get as much of the pumpkin pulp off of them as possible. Some of the small pieces are going to adhere, but they won't hurt the seeds at all, and might even add a little more flavor.
Pat dry with paper towels. Don't let them dry completely on the paper towels, because they might stick!
Toss seeds with the butter, sugar, and spices.
Heat oven to 300°. Spread coated seeds in a shallow baking sheet (I line a baking sheet with nonstick foil to make cleanup easier), turning from time to time, for about 45 to 60 minutes, or until nicely browned and crunchy.

Roast pumpkin seeds
Serves 9
Preparation time less than 30 mins
Cooking time less than 10 mins
Ingredients
100g/3½oz pumpkin seeds
¼ tsp celery salt
¼ tsp salt
¼ tsp freshly ground black pepper
¼ tsp paprika
1 tsp vegetable oil.
Method
1. Simplicity itself. Heat a frying pan.
2. Brush with a very small amount of oil, then add the pumpkin seeds. They will expand and brown fairly quickly, and when this is done, place them in a bowl and add the salt, celery salt, freshly ground black pepper and paprika. This is delicious if the pumpkin seeds are reasonably fresh.

You can use the flesh cut from the centre and then cut as big a chunk as you can ,but if you really cant get the flesh out then you can rinse and dry the seeds and make a necklace or put them on an oven tray and roast them very good for you or feed them to the birds .

after you clean the seeds out of your pumpkin then you and quarter it and bake it at 350 for about 15 minutes the it will soft, you can scoop the meat from the skin and make pumpkin pie and bread and all kinds of stuff... you can also roast your seeds at the same time you are softening up the meat.
