I believe that it is used in hunting, but I don't know anything else about it.

Bird shot is sometimes also just called shot (small lead or steel bb's) that can be loaded into ammunition. The biggest use is in shotgun shells although you can find birdshot loadings for an assortment of handgun calibers by CCI.
The most common sizes of birdshot you would find is #6, #7.5 or #8. Yes it is frequently used by hunters, but also used by people who shot clays. The birdshot is necessary as that it will create a pattern (large cloud of shot) big enough to hit the small clay targets but still concentrated enough to shatter the clays.

There is also square shot in addition to the round bird shot. The square shot is used to make a "spreader" charge, the patterns will open up faster than round shot.

Bird shot is the bb's in a shot shell for a shot gun as opposed to a slug which is a single projectile from a shot gun. In some states (like Wisconsin) it is illegal to shoot birds with a rifle or a shot gun with a single projectile (slug) so when hunting birds you MUST use bird shot. The size of the bb depends on the size of the bird you are hunting.

This refers to shotgun shell loaded with small pellets, like the # 7 1/2, or # 8 Shot.

I could be wrong, but I think you mean buck shot. If so, it is a shot gun with large pellets. In the cases I am aware of, it is meant more to injure and scare more than kill.
