Depends on the dish! But here are some of my favorite "secrets":

1. Lipton's Herb and Garlic dry soup mix
2. Fresh basil
3. Tahitian Vanilla
4. Sour cream
5. Brown sugar

Nutmeg in a lot of things - sugar cookies to spaghetti sauce
Sherry and a touch of nutmeg in a cream sauce dish
Cinnamon - just a touch in my oatmeal chocalate chip cookies- you wont know why but you can't stop eating them
Cinnamon sprinkled on greenbeans

You said one but cinnamon and nutmeg are similar and cinnamon in the spaghetti sauce is also good

Vanilla Bean marinade. Instead of buying vanilla extract I soak 4 vanilla beans in a pint of Jack Daniel's. I saw a recipe that called for vodka and vanilla beans but the JD was my own twist.

Mmmmm, not one particular ingredient but the process for making my homemade fudge which everyone accuses me of buying at a candy store. I'll never tell how I do it.

A few secret ingredients I learned from my mom: add just a dash (very small dash!) of ground cloves to marinara sauce; add just a dash of sugar to frozen vegetables to make them taste fresh; add a dash of cinnamon to pot roasts and hearty soups; add a dash of nutmeg to mashed potatoes.

I like to add a dash of worcestershire to just about all my meat dishes, dark sauces, gravy and soups. V-8 juice added to any hearty soup spices it up. And last but not least, I like to add cocoa to my chili, along with a grilled sirloin steak that has been cubed.

No my one secret ingredient is thyme... i use it in everything i make except desserts, and it isnt really over powering so they sit back and say hummmmmmmmmm i can taste something but not quite sure but it tastes good...

Turmeric. You can put it in and on EVERYTHING. It is a real flavor enhancer and it adds a yellow or orange color to everything which really enhances the visual appeal. It even makes chocolate cakes richer.

When cooking any kind of meat (beef, chicken, pork) I always season with lemon pepper. It gives it a really good flavor.

NOT precooking pasta...from the Emeril LaGasse show...it then absorbs the natural flavors of whatever your cooking...
