Oh I have a scientific explanation for humans. So that would be d).
Our curiousity to explore the outer space and looking for a suitable planet that we can inhabit proves that humans are like a micro-organisms. Humans plagues a host, in this case the planet, and consumes it's natural resources. And when the resources are almost depleted, we go out looking for a new host. We are but a micro-organism of something bigger than we are.

As it was a college class for credit, I would answer the question based on what the content of the class taught. If given the opportunity as in an essay question, I would at the very end after answering from the textbook or lecture material, state that I disagreed with the evolutionists theory and believe wholeheartedly in the creation as taught in scripture and then reference scripture (always looking for an opportunity to give a witness).

That makes no sense, Scientific explanation is evolution created. Vise-versa. Flip it. Religion is just that, and not scientific. Religion fears Science, because religions knows that science is the only thing that can proof it, in fact, that it's not correct.
I would put humans are created by and of Atoms, everything in our Universe is started with Atoms and such. Therefore this is not an evolution answer, but scientific truth.

None of the above. You aren't being asked for what you believe, you are being asked to remember what you were taught. Science is a discipline that people are expected to learn. They even teach evolution at Christian schools and universities. If it is an essay you can preface it by saying "according to prevailing scientific theory", which basically shows that you are aware of the theory but not stating that you believe it. Profs don't expect you to believe what they teach, nor do they care, but they expect you to know it.

I personally believe humans were created by aliens. The God of the bible, the Quran, the gods of egypt, Greece, Rome, and India all were said to come from somewhere other than earth. That makes them extra-terrestials or aliens...
So I believe we humans were created by aliens of some sort.

I would use the word elohim and, yes, use the Bible. But I cannot avoid referring to evolution, prehistoric genetic engineering and a lot of things most people are not prepared to digest.

I would explain the well documented scientific process through which man's biological nature is known to have developed, but would also explain that no biological process could produce man's spiritual nature, and therefore there is no scientific explanation that completely explains the existence of man.
