Drinking alcohol isn't a sin. Jesus drank wine, and He never sinned.
Getting drunk is a sin. You couldn't possibly get drunk during Communion at a Catholic Mass for two reasons. First, only a small amount of wine is used. Second, the wine is transubstantiated and becomes the Blood of Christ, and each person only gets a small amount (if any).

Drinking alcohol is NOT a sin, and I quote, "Drink no longer water but use a little wine for thy stomach's sake and thine often infirmities." 1 Timothy 5:23 KJV. Getting drunk or drinking in excess is the sin. Every thing in moderation is the key.

There is no where in the bible that says that drinking is a sin. What is a sin is getting drunk and losing self control over it. I have seen my father drink many times, but he has taught me that you have to have self control over the alcohol.

According to the bible (and not just the catholic version) Jesus himself turned water into wine did he not? Perhaps getting stoned drunk is a sin but just drinking wine or beer so far as I know has not been declared a sin in my bible.

Where in the Bible does it say drinking alcohol is a sin??? All I have ever read is that getting DRUNK is wrong, that drunkards will not inherit God's Kingdom. Getting drunk is a far cry from having a drink or 2.
1Co 6:9-10...What! Do YOU not know that unrighteous persons will not inherit God’s kingdom? Do not be misled. Neither fornicators, nor idolaters, nor adulterers, nor men kept for unnatural purposes, nor men who lie with men, 10Â nor thieves, nor greedy persons, nor drunkards, nor revilers, nor extortioners will inherit God’s kingdom.
In fact, the apostle Paul told his young friend Timothy that a little wine is good for the belly (when it is upset).

Jesus said that when he establish the sacrament of communion as the offering of Malkysaddik
Luke 22:17-22
After taking the cup, he gave thanks and said, "Take this and divide it among you.
For I tell you I will not drink again of the fruit of the vine until the kingdom of God comes."
And he took bread, gave thanks and broke it, and gave it to them, saying, "This is my body given for you; do this in remembrance of me."
In the same way, after the supper he took the cup, saying, "This cup is the new covenant in my blood, which is poured out for you.
But the hand of him who is going to betray me is with mine on the table.
The Son of Man will go as it has been decreed, but woe to that man who betrays him."

If drinking alcohol is a sin, would Jesus have used his gift to make water into wine?
It is like money. It is not money that is evil, but the love of money.
It is not drinking that is evil, but getting drunk and the debauchery that follows it.
There are many forceful scriptures about this.
As you yourself pointed out, Jesus used wine to symbolize his blood making it necessary, a must for some to drink wine.
