honestly? Minimum a 100 a day. All depends on what you want to eat and what you want to do. There is a lot of free stuff. Buy a weekly unlimited ride metrocard for the train/bus.
Manhattan is expensive. Hotels are expensive. Try your local bookstore or amazon. There are a few NYC on x dollars a day books.
For 5 days and two people, I'd count on at least 1000-2000 to do it right.

What ever you do it maybe an idea to have an emergency credit card as back up. I always feel a whole lot safer it you run out of money at least you have something to fall back on. If you don't use it just cut it up into very small pieces and bin it.
As your girlfriend is going with you she will want to shop, no doubt it's New York. It might be an idea for her to look for a sample sale where they sell clothing at a great knocked down price. It will also be the January sales.
Factor in the cost of tipping, as you have to tip everybody, taxi drives, door men, waitress, you name it.

Your biggest expense will be hotel and food.
Hotels in NY have become very expensive, even the off the beat and path ones. Expect to pay at least $175 a night, athe room will be small. (On top of that NY charges almost a 20% tax on the room rate).
Food can inexpensive or very expensive, depending on your tastes. Melas can be had for under $20 at good restaurants (try the upper east side and upper west side for the best values, and stay away from midtown, as they are the worst values) Same for bars.

More than enough. New York blew me away. I can't tell you exactly. Just be sure to plan everything and if possible, pay for your tickets and all in advance or look up everything you'll be doing. Eating is very expensive. The one thing you should know that I didn't expect is at most places, you'll be charged for a refill. Well, I was atleast. It will make you very frustrated to pay five dollars for two iced teas.

ALOT. The cost of living is way higher in NYC so even a regular bigmac meal is more than the 5 bucks it is every where else. In touristy areas they charge more than other areas because they know you guys will spend more.
