cultured milk is milk that is fermented by adding known bacterial cultures - hence the name cultured milk. For example, buttermilk, yogurt, kefir and sour cream are all cultured dairy products.
regular milk, from the supermarket, just milk that is pasteurized and homogenized.

Cultured milk is thicker than regular milk and a bit sour, rather like yoghurt but not so thick, closer to buttermilk. It contains helpful bacteria which restore the intestinal flora. It is not interchangeable with regular milk in cooking, except in recipes which use buttermilk, where the acidity activates the baking powder, e.g. Irish soda bread. Refreshing to drink chilled, but I would not like it in my tea!
