The possibilities are as endless as there are brands of coffee. It is also very subjective as the coffee I enjoy might not be something your mother-in law would like. For instance, I'm not real big on flavored coffee so a gift of one would be something I'd not use. I would prefer a gift certificate to a coffee shop.
Possibly go with her when she uses the certificate and stop at a coffee shop after.

Seattles Best, Gloria Jeans, and Millstone have great coffees too. The Coffee Bean and Tea Leaf espresso drink bars have great coffee too
Starbucks just has market share. Their coffee is actually quite awful, but since most people that go to Starbucks don't order PLAIN coffee, they never taste it.

Try the most expensive brand of Kona coffee from Hawaii. Seattle also has really great coffees. MOre exotic one's from Ehtiopia perhaps but I guess there is an association with a destitute country

I don't know where you live but Caribou Coffee is OUTSTANDING. They're located in Ohio mainly, but they're quickly growing on the east coast and across the midwest. Checkout their website - http://www.cariboucoffee.com/index.asp. My boyfriend SWEARS by this coffee. Amy's Blend and Obsidium are his two favorites.
