The practice of toasting originated in Ancient Greece, at a time when fear of poisoning was a significant concern. To put guests at ease, the host would pour the guests' wine from a common decanter, take the first drink to demonstrate its safety, then raise his cup to the guests and invite them to drink in good health (Wikipedia 2007)

In olden times poison was an easy method of eliminating an enemy. It was usually placed in the intended victim's glass and consumed without notice. To stop this unfortunate crime from continuing, people started to demand that the wine be poured from one jug into the glasses with everyone present. This worked for a while until the discovery of a new poison. This poison was clear and without odor. It was used to coat the inside of the intended victim's glass causing the wine to become contaminated and lethal when it was poured into the glass.
The next logical step was to fill all the wine glasses from one jug and have the people pour a portion of there glass into everyone else's glass at the table. This would insure that death for one was death for all, and as you can imagine, this rarely happened.

Today, people have dispensed with exchanging wine from one glass to the other, but still tap there glasses to celebrate a meal or a reunion!!!

A toast conveys your affection, admiration and appreciation to your host. Make sure you prepare for and deliver it well. Note down all that you would like to say in your toast in advance.
The best time for your toast is just before the meal is served. You can also deliver it immediately after the meal. But, make sure all the guests have finished eating. Stand up and tap your glass gently to gain everyone’s attention. Request everyone but the host to rise.

Once everyone has stood up, raise your glass and start your toast. Keep it short, sweet and appropriate for the occasion. The best toasts are those that are witty, light, and yet warm and heartfelt.
Using personal anecdotes about your relationship with the host helps keep the toast humorous. Compliment the host on his achievements or his personality traits. Thank the host for the invitation. Finally, finish the toast by requesting all the guests to drink to celebrate the host’s achievements.

Because years and years ago to have a feast or a meal was something not to be taken for granted. A person sat down to a meal with gratitude for what was placed before them. That is why there is/was prayer before a meal to give thanks and a toast to wish good fortune on your guest. It was a sign of appreciation and wishes of good fortune.
