Like if you go to the doctor and get a blood test and your blood is fine, is it possible you could go back three months later and be diagnosed? because of a high WBC count?

Yes

The time interval it takes for leukaemia to become apparent on your blood tests varies. Certainly it is possible to have a normal white cell count one day and three months later be diagnosed with leukaemia.

It would be uncommon for something like that to happen within a week and rare for it to happen within a few days ... but there are no NEVER's in medicine and some people present in crisis with rapid onset of the disease.

well...anything is possible,but,usually you would have other symptoms in meantime...
