In the past my boiled sweet potatoes have turned out sloppy and wet....yuck.
And my roasted ones much the same.
I'm a disaster with these tatters, and need help with all basic recipes.
I'm not looking for anything flash, just normal every day stuff.
Boiling or steaming, mashing & roasting (baking). And preparation.
Thanks.

The secret to Baking a Sweet Potato is simple:

1. Wash your Sweet Potatoes to remove any dirt, let dry.

2. Rub Sweet Potatoes with butter or oil all over, this seals the skin so it will not dry out.

3.Wrap Sweet Potatoes in foil.

4. Place the sweet potatoes on a baking pan, and put them in a 425 degree oven for 50 to 60 minutes. Large ones may take a bit longer.

5.Test for doneness by squeezing the skins. They should give easily and feel soft.

Another way to bake sweet potatoes is to peel them and slice them about 1/4" thick. Brush them with a little canola oil and put them on a lightly oiled baking sheet. Bake at 400 for about 30 to 35 minutes. Test for doneness with a fork. They should pierce easily.

To Steam:

You can choose to peel them or not.

Slice the sweet potatoes about 1/2" thick and put them into a steamer basket (either metal or bamboo) over a pot of water. Cover, and turn heat to high, bringing the water below to a boil. Keep the water boiling for about 7 to 10 minutes and fork test for doneness. They should pierce easily, and the skins will be very tender. You can also cube the sweet potatoes before steaming if you plan to use them in a casserole.

Using a fork stick some holes in the potato all the way around.

bake them for maximum sweetness. Wrap in foil and bake at 400 degrees for about an hour or more until soft.. Let them rest a bit when finished and enjoy them. I take the skins off and mash them with sugar, cinnamon and butter. Maybe a drop or two of milk. If you like savory then skip everything except the butter.

Cut the sweet potatoes however you like. Put them into boiling water. Add some brown sugar and honey. Your set for your sweet potatoes.

I like mine roasted in the oven with onions and white potatoes (any kind is fine - red, yellow, russet). Peel them, cube them, toss with oil salt and pepper.

They will get a nice crust if you don't turn them too often. Once or twice is fine. Be sure to salt again when they come out to correct the seasoning.

I would use a hot oven (425 or so) and watch them.

sweet potatoes always cook up very soft... compared to a regular potato.

I boil them whole with skin on, but washed.
When they are fork tender, I just take them out of the water and just let them drain, dry and cool off a little.
Now you can peel do with them as you see fit - mashed, cut into chunks... etc.

You can also microwave a washed sweet potato - about 4 to 6 minutes.

peel,cut in big chunks,boil until only half cooked, drain, move to roast pan,and brown sugar,butter, pecans some people also use small marshmallows. bake at 350 for 30 min. if you like them more firm start checking at 20 min.

Sweet Potato french fries are the best....just peel and cut into fries like you would white potatoes, deep fry and salt as soon as you remove them from fryer.

i love sweet potatoes, i've made sweet potato french fries,
baked sweet potatoes with brown sugar, and a touch of butter or honey, sliced and baked in a baking dish with butter and brown sugar , marshmellows. or baked in the microwave and eatin' just the way they are.
