I don't know about black olives but I do know about the green ones!
I am cutting down on calories but not on flavor.
I always use the brine to get that good EVOO flavor without the fat.
I wish they would just bottle the brine minus the olives.

Sure, I use olive brines and pickle juices all the time to make my own salad dressings. Actually, sometimes I use the pickle juices to make pickled beets and pickled eggs as well. Just make your best guess on combining your oils and vinegars and then give it the taste test and adjust accordingly.

Sure! I use the oil that marinated mushrooms and artichoke hearts come in also! These marinades taste great in an a pasta or green leaf salad!
