I love oven fried chicken. Easy to make and way less fat involved.

Here's what you do:
Heat oven to 400 degrees. Grease a 13x9 pan. Rinse 2 to 3 pounds of frying chicken. Roll damp chicken in 1 cup instant mashed potato flakes combined with 1 Tablespoon paprika, salt and pepper to taste. Place skin-side-up in prepared pan. Nake for 50-60 minutes or until chicken is tender and golden brown.
Makes 4-6 servings
For an Italian version add parmesan cheese and Italian seasoning along with garlic powder.

Done anyway fresh off the farm. My Grandparents have a farm and the food is the best because it's killed and eaten the same day or a few days later. I remember my cousin taking me down to the barn to "get supper" I didn't eat the chicken that night but after my trauma was over, I liked chicken again.

I make herb roasted chicken... i start with one whole chicken, cleaned and giblets removed, and i melt one stick of margarine and add 1 tsp each of rosemary, thyme, and parsley to it and mix and then i add 1tsp of lemon juice and mix it in and i baste the whole bird with it and loosen the skin over the breast of the chicken and spread some of the margarine in there too for flavor... then i add 1 can of chicken stock to the pan and roast it for 2 hours on 325 degrees, and i baste him every 30 minutes with left over margarine herb mixture and he gets nice and crispy and juicy... plus the stock and melteed margarine drippings make a good gravy fixins...

My Grandma's chicken. Nothin fancy. She just washes the chicken thoroughly (of course) ...(whole chicken)....slaps it in a casserole dish with carrots and potatoes....slaps it in the oven and its the best Ive ever had! You can add the spices of yr choice. Good, old-fashioned food! Best! She also cooks chicken in a slow cooker (whole chicken again)....turns out awesome every time! ...I LOVE YOU GRANDMA!!!
