they may not be quite cooked all the way. I'd leave them in a warm oven for a few extra minutes.

after baking time is up let then set an extar 5 mins in the hot oven turn off the oven an just let them set, the tops take a little longer to firm up

eat them while their hot! haha! or just don't cover them- leave them out and they'll stay cronchey

cover them up with celophane when storing them
