Try singing "Emily" by From First to Last. EVERY girl is a sucker for this song. It's a little more difficult to sing, but even if your voice cracks - it's totally worth it.

I'm guessing that you wont want to continue your singing after you have sung this song to your girlfriend.
You are already at an advantage, because you have only got to learn one song.
My advice to you would be to understand the song and what it means to you from the lyrics point of view.
Don't try to mimic the original singer.
Put your own interpretation to it.
Sing it with confidence.
From the technical point, just concentrate on your breathing.
Understand where in the song you should rest and breath.
Always use the air in your lungs to the best advantage.
Do not "hold your breath" always keep the air in your lungs fresh.
Try and power your voice from the diaphragm, do not tense the muscles in the neck or shoulder area.
Above all enjoy it.
The above is only a brief idea as to what you should concentrate on, as singing is a life long learning and cannot be learnt in a day.

Well, the best thing I can tell you is to do warm ups, they really do help and can expand your vocal range with practice, but you have to keep doing them, even if they are silly, and most of them are. In all the choirs I've been in we've done really stupid things like screaming, tongue twisters with melody, singing off key on purpose, to just basic scales. If you own a guitar or keyboard, just start from a really low note and try to hit that note with your voice by singing "la" or "ah", whatever is most comfortable, and keep going gradually higher until you can no longer hit the note, and then back down.
Also, if your voice is tired or sore or even a little flat, drinking warm honey really does help. It keeps it from jumping and makes it smoother. Also, before you sing, try to not drink or eat things with lots of sugar in them, like candy. The sugar coats you're throat and makes it less stable.

You could practice singing the song you want to sing her. Listen to the song on a CD and try to mimic the person singing. Another way is to record the song as you sing it then play it back and see where you need to improve. Also find a good place to sing to her where the acoustics of the room improve your voice.

Sing whatever comes to mind. "Wing it" if you want. Little by little she will see that there is a song in your heart. She probably just wants to know what that is. Your "singing voice" will emerge if you allow it. Then ask her to sing also.
The music is in both of you. The fun is in discovering it and making it blend into one voice.

Practice in the shower! The acoustics will make your voice sound even better and when you hear how great it sounds it will help with the confidence piece. I suspect that, for your girlfriend, it really isn't about HOW you sound, but that you would do something so wonderfully romantic for her. Give it your best! Good luck!
