The best frittata I ever had contained the following:

eggs
sliced or diced left over potatoes (either baked or left over raw fries)
bell pepper
onions
garlic
mushrooms
and cheese - shredded - cojack is best

Saute the onions and garlic. Saute the mushrooms and bell pepper. Add the leftover potatoes. Move everything over to one side of the pan and add the beaten eggs to the other side. When it starts to set, stir it into the other ingredients and continue cooking until the eggs are almost done. Sprinkle with cheese, stir and sprinkle again. Serve immediately.

8 eggs
2 Tbsp milk
1 plum tomato, chopped
1 cup Mozzarella Cheese, shredded
2 bacon strips, cooked and crumbled
1/2 cup white mushrooms, sliced
1/4 cup fresh basil, chopped
oil for pie pan
Directions


In a bowl beat the eggs and milk together.
Mix in the tomato, 1/2 cup of Mozzarella cheese, bacon, mushrooms, and basil.
Oil the a 9" pie pan.
Pour the egg mixture into the pie plate.
Bake at 350F for 20 minutes.
Top the frittata with the remaining cheese and return to the over for 10 minutes, or until puffed and golden brown.
Remove from the oven and allow to stand for 5 minutes before cutting.

Cheesy Pasta Frittata

Prep Time: 10 minutes
Cook Time: 10 minutes

Ingredients:

1/2 cup chopped green pepper
2 Tbsp. olive oil
1 Tbsp. butter
6 eggs
1/4 cup milk
1/3 cup grated Parmesan cheese
1/2 tsp. dried basil leaves
Salt and pepper to taste
1 cup cooked fettuccine, cut into 2" pieces
1 cup shredded Muenster cheese
1/4 cup grated Parmesan cheese

Preparation:

Preheat broiler. In heavy skillet over medium heat, heat olive oil and butter until melted and foamy. Add green bell pepper; cook over medium heat until crisp tender. Meanwhile, in large bowl, beat together eggs with milk, 1/3 cup Parmesan cheese, salt, pepper, and basil.
Add pasta to egg mixture and stir gently. Add egg mixture to skillet; arrange pasta in an even layer.

Cook egg mixture over medium heat, lifting sides occasionally to let uncooked egg flow underneath. When egg mixture is almost set but still very moist, top with Muenster cheese and 1/4 cup Parmesan cheese. If using a pan that is not oven safe, cover the handle with heavy duty aluminum foil.

Place pan under broiler, about 4-5" from heat source, and cook for 3-5 minutes until frittata is puffed, set, and beginning to turn light golden brown. Remove from oven and cut into wedges; serve immediately. Serves 3-4
