Most animals use mostly fat/lard to store energy, and plants use oil (i.e. corn oil), but arctic animals use mostly oil. For example: a walrus is mostly oil, which is what causes it to be awkward on land. Its body kind of oozes out because of the oil.

Not only do they need to store energy in case they don't eat for a while (as polar bears don't eat during the arctic winter while they are in their dens), but they also need the extra fat to serve as insulation against the cold.
