Olive Oil.
Actually what tastes great in rice is chicken broth for the liquid. I don't every use any oil or butter.

The reason you're adding butter to the rice is for flavor, and to make the rice not stick together. The rice will be okay if you use oil to not stick, but the flavor obviously will lack. So if you do use oil (which makes the most sense as a substitute) go very lightly, and then make up for the flavor elsewhere.

Just make a fried rice, the filipino way. Use regular cooking oil, pour your minced garlic in a pan then put your rice and add a dash of salt. Cook it for 5 minutes and serve. It's great with your meatballs or anything that you can eat with rice.

You don't need oil/fats to cook rice !
Stick with the ratio of 2 parts water to 1 part rice
Bring the water to a boil, add another ounce of water, then add rice, stir and cover and turn off heat - then wait 40 mins ! Steamed rice !!!!
Easy and good :)

When hubby was on his low-fat/low-cholesterol diet, I just left the butter out - especially if there is sauce involved with the meal. But, if you really feel the need, you can use chicken broth. Otherwise, just make extra sweet n sour sauce to pour over the rice.

I always use Olive oil - have to agree with all the others. Much healthier too.

Why use it at all if your gonna put the meatballs over it? Sprinkle a lil salt or a lil Mr.s dash on it and that's all ya need. :-) good luck
