If you are serving a heavy dinner, this is a perfect dessert. It has a kind of custardy base in the center, is light, and has strawberries on top. You can use whatever kind of fruit is in season if you wish. This recipe makes 4 pieces so you don't have to worry about a lot of leftovers.

STRAWBERRY KROPSUA

1 egg
1 1/4 T sugar
2/3 c milk
1/3 tsp vanilla
1/3 c flour
1/3 tsp oil
1/3 T powdered sugar
4 strawberies

Heat the oven to 425º. Place a 7" cast iron skillet in the oven for 10 minutes while making the batter. Beat the egg and 1 1/4 T sugar in a bowl with the mixer. Then add the milk and vanilla and continue to beat. Add the flour and incorporate with a wire whisk. Take the skillet out of the oven, brush the pan with oil and pour the batter into the pan. Bake in the oven for 20 minutes until fluffy and golden on the edges. Remove from the oven and let set 10 minutes (will deflate a little). Cut into 4 pie-shaped pieces, sprinkle with powdered sugar and slice the strawberries - keeping the stems intact so you can fan the strawberry out on the top. The center will be like custard.

Enjoy!

1 1/2 cups flour
3 tbsp cocoa
1 cup sugar
1 tbsp vinegar
1 tsp baking soda
5 tbsp vegetable oil (or applesauce)
1 cup cold water
stir well.
pour into a small cake pan and bake at 350 degrees for 30 minutes. Let cool.
Release cake and break it up into pieces, mix with cool whip.

In a bowl - line bottome with fresh slices of strawberries (or cherry pie filling) add cake and whip topping mixture, then another layer of either the berries or the cherries, then add a firm layer of whip topping, then more cherries or berries, then the rest of the cake and whip topping mixture, then a final layer of whip topping and top with chocolate shavings.

AWESOME! You can use any filling you wish in place of the strawberries or the cherry pie fill - whatever, blueberries whole or pie mix, lemon, chocolate pudding, vanilla pudding - whatever you like. You can also substitute some of the whip topping with pudding the make it more delectable.
