I think EggSalad would be a good thing to take to lunch everyday, does anybody have any easy recipes for EggSalad?

4 eggs
1/2 tablespoon mayonnaise
1 tablespoons prepared Dijon-style mustard
1/2 teaspoon dried dill weed
1/2 teaspoon paprika
1/2 red onion, minced
salt and pepper to taste
OR
8 ounces cream cheese, softened
1/4 cup mayonnaise or Miracle Whip
1/2 teaspoon salt
1/8 teaspoon white pepper
1 tablespoon Dijon mustard
1/4 cup pickle relish
1/4 cup finely chopped celery
8 hard-boiled eggs, chopped
With a hand mixer beat together the first 5 ingrediants.
By hand stir in the relish and celery, then fold in eggs.
Keep refrigerated till time to use.

This is the way my hubby likes it to be made.

6 hard boiled eggs
2 blops (that's a soup spoon, which is a good heaping Tbsp.) of real mayo
1 blop Dijon
1 small blop (about half a Tbsp) dill pickle relish
About 1 tsp. of white vinegar

Put the eggs through a potato ricer, then mix everything else in. Sometimes I add some dried dill.

Now, my version is different. I use Miracle Whip, yellow ballpark mustard, and sweet pickle relish. So yes, I make 2 different versions to keep in the fridge. :)

INGREDIENTS
8 eggs

DIRECTIONS
Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
In a large bowl, combine the egg, mayonnaise, mustard, dill, paprika, onion and salt and pepper. Mash well with a fork or wooden spoon.
Serve on bread as a sandwich or over crisp lettuce as a salad.

Egg Salad

6 hard cooked eggs, chopped
1 Tbsp minced onion
2 minced stalks celery, plus leaves
1 tsp celery seed
dash salt
dash black pepper
1/2 cup mayonnaise, or salad dressing
1 tsps prepared mustard

Mix all ingredients, refrigerate until ready for serving.

INGREDIENTS:

* 7 hard boiled large eggs
* 1/2 cup diced celery
* 1/2 cup diced sweet pickle
* 3 Tbs. mayonnaise
* 1/4 tsp. ground pepper
* 1/2 tsp. salt

PREPARATION:
Slice eggs in half and take out 3 yolks, put them aside. In a medium bowl chop the rest of the eggs into small pieces. Add celery, sweet pickles, salt and pepper. In a small bowl, take the 3 yolks and mash them with a fork.

EGG SALAD MIX

hard boiled eggs - cut in both directions with an egg slicer
mayonnaise
a little mustard
1/2 to 1 tsp curry
fresh ground black pepper

I love the flavor of curry in my egg salad mixture. You can also add diced celery and pickle relish (sweet or sour) if you'd like but the curry tops it off.

6 hardboiled eggs, grated fine or sieved
1/3 cup minced pimiento-stuffed olives
1/4 cup plus 1 tablespoon mayonnaise
2 tablespoons minced scallions
2 tablespoons minced parsley
1 tablespoon prepared Dijon mustard
Salt and freshly-ground black pepper
Lettuce leaves

Combine all ingredients in a medium bowl, and mix thoroughly. Refrigerate, covered, at least 30 minutes.

Serve atop lettuce leaves or spread it in a sandwich. Leftovers can be kept a couple of days.

Boiled Eggs- Peeled and de-yolked (save the yolks).
Chopped Gherkins.
Chopped Celery and green onion.

Sauce:

In a food processor combine:
1/2 cup mayo
1 tsp creamed horseradish
1/2 of the yolks from the eggs
1 tsp juice from gherkins
salt and pepper to taste

combine sauce and other items.
