I love fresh sardines but the bones end up getting stuck in between my teeth, in my gums and in my throat and it is SO annoying. It is my favourite fish but the bones just ruin it - no matter how soft they are. To pluck them out with tweezers takes so long that they go cold - any top tips from chefs out there?

If you have a pressure cooker experiment with that and the bones will cook up completely like canned salmon.

I don't know about fresh sardines, but for canned salmon anyway, I'll smoosh the bones with a fork till they're pulverized then just mix them into the rest of the salmon and prepare in whatever way I had planned. That way I'm eating the bones which are definitely nutritious, but not getting the feel or taste of the bones too.... can't even tell they're there.

I've never met a sardine in its fresh state, but one simple squish with a fork when eating canned sardines gets rid any bones I might taste too.

If the sardines are really fresh, lay them on their side and pinch the flesh at the bottom, nearly at the tail, and the whole fillet should peel off cleanly with no bones.

Fillet them before cooking them, it'll be difficult, but it's the only way I can think of. Once you have the fillets, flour them and fry them with skin side up for a few minutes, then flip and do the same.
