According to many sources, it was painted with a bad method, napoleon's troops used it as target practice with rocks and bullets, many restoration projects and preservation methods damaged it further. Even one reference described that it was completely obliterated except for a little bit of Jesus's face.

How could such a painting be restored, to the original work? Or are we just looking at someone's interpretation of what it should have been?

Napoleon's troops used the Sphinx for target practice. Leanardo's Last Supper was inside a room. It's years of candle use, incense and there was a fire - coated it with soot. This soot was organic and with special detergents and methods they were able to take the soot off but not the paint off.
The paint has changed color through the years - such as the vibrant blues are now green. This can not be fixed by any method.
