Help! Does anyone know any low carb recipe that tastes great and easy to make or worked well for you? Also I don't have almond flour or vital wheat gluten flour. The ingredients i have to work with are oat flour, soy flour, and flaxseed meal. I'm looking for like bread recipes, meal ideas, deserts, and just good ideas in general. Thanks!

Here are 3 delisious low carb recipe's for you, hope it help

Baked Salmon Italianne:

12 oz salmon
1/4 cup mayonnaise
2 T unsw. ketchup (2)
6 pieces sun-dried tomatoes (6.6)
4 strips bacon, cooked, cut in 1" pieces
1/4 cup chopped onion

Method

Mix mayo and ketchup to make Russian Dressing. Heat tomatoes in water in microwave for few minutes to plump. Spray casserole dish with Pam. Lay salmon pieces in and cover with dressing. Cut up tomatoes and lay on top; sprinkle with chopped onion. Bake at 400 for 20-25 min. Put under broiler for just a few minutes to brown top.

Serves 2 @ 6 carb, 1 fiber (5 NET carbs), 430 Calories, 34 fat, 28 protein


Recipe 2

Chicken w/Basil Cream Sauce

1/2 cup chicken broth
1/2 tsp ea. garlic powder, Italian seasoning
salt & pepper
1/2 cup heavy cream
4 tbsp prepared pesto sauce
2 tbsp parmesan
3 chicken breasts

Method

Cook the chicken any way you like. (I sauted the breasts in frying pan, then lowered the heat, covered and cooked about 10 minutes til no longer pink inside). Sauce: in large skillet bring broth and seasonings to boil. Let cook til about 1/2 volume. Stir in cream, and again cook down til about 1/2. Whisk in prepared pesto and parmesan. Serve over chicken.

(Sauce makes enough for 5 chicken breasts @ 2 carbs, 157 cal, 15 fat 4 protein)

Recipe 3

Pineapple Beef Stir Fry

1 lb beef sirloin, cut in strips
1/2 tsp NotStarch
1 tbsp soy sauce
1 red pepper, cut in slices
1 clove garlic, crushed
1 cup pea pods
1 cup broccoli oil
Sauce: 1/4 cup tomato sauce
2 tbsp splenda
1 tbsp soy sauce
1 tsp worcestershire sauce
1/2 tsp pineapple extract

Method

Dissolve NotStarch in 1 Tbsp soy sauce. Add beef and toss to coat. In bowl, combine sauce ingredients. In frying pan, heat 2 T water and saute peppers, broccoli, pea pods and garlic 3-4 min til crisp-tender. Remove from skillet. Heat oil in skillet and add beef, 1/2 at a time, and stir fry 2-3 min til outside no longer pink. Return veggies and all beef to skillet and add sauce. Cook minute or two til all heated.

Serves 3 @ 9 carb, 2 fiber, (NET 7 carbs), 356 cal, 22 fat, 30 protein.

I don't DIET on the Low Carb plan, I LIVE on it. As long as it doesn't have carrots, corn, peas, potatoes or pasta I love it. Salads can be varied and most interesting with the variety of fresh veggies available. Toss a half cup of diced cooked meat of any type on top, grate a little cheese over it. All my salads come out at about 30 grams of carb. I don't know how anyone can get bored with green leafy veggies, tomatoes, cukes, radishes, broccoli, cauliflower, Hey, I ate a grated zucchini salad the other day that was excellent. made with the same ingredients as potato salad but in place of the potato they used grated zucchini. Raw!!!

Hubby did the low-fat/low-cholesterol diet until he became "borderline" diabetic and had to go on a low-carb diet. We did the Atkins thing so I'm very familiar with recipes for all of the above.

Low-carb recipes are the easiest to do because there's no work to them. Meats, veggies (the lower carbby ones like cabbage, zucchini, broccoli, cauliflower, Brussels Sprouts, pea pods, summer squash). You can make quiches without the crust using the eggs, milk or cream, your fav meats, cheeses. You can either boil, steam or bake your veggies. My neighbor who also did Atkins for a bit used to buy the Atkins syrup and she's sprinkle it on her veggies before she baked them. You can make Mock Potato casserole using cauliflower instead of potatoes. The only changes you have to make between the two recipes is steam the cauliflower until you can mash it with a fork and substitute the sour cream with cream cheese since cauliflower doesn't soak up moisture like potatoes do. You can use your cheese, chives, and crisp bacon in it. Hubby loves it. Everyone asks for it to be served on the side at Thanksgiving and Christmas too.

You can take any seafood, place a layer of Romaine lettuce in a steamer and place the seafood on top of it in a single layer, top with more Romaine and steam until the seafood is done. The Romaine - cooked - tastes like a mild spinach. All that is low-carb.

You can make cheese souflle but use some psyllium powder in place of the flour - very little - like no more than 1/8 tsp. Hubby takes the psyllium powder as a fiber supplement (like a person taking Metamucil but psyllium powder has no flavor so it doesn't change the flavor of your dish). It will be enough to keep the souffle from having liquid in the bottom. I originally tried it with almond flour but it just couldn't keep the dish together all the way through. Tried Vital Wheat gluten too - same thing - but the psyllium powder did the trick. Be careful not to use too much or it will "jell" and jell quickly!!

Lots of egg dishes you can make - adding onions, bell pepper, hamburger, garlic, guyrere cheese, parmesan cheese, and kale for a nice Joe's Special.

You can cook zucchini and summer squash either in the oven or steamed and top with Hollandaise sauce - no flour there. Or top with cheese sauce - again thicken with the psyllium powder but not very much.
