Baby hid the meat thermometer, so assume that I don't have one:

- 14.09 lb turkey.
- 325 degrees Fahrenheit
- Convection oven (convection feature may be shut off)
- Foil-covered for 3/4 of cooking cycle
- Turkey is not stuffed

I think I remember 20 minutes a pound. So maybe leave it in for 3 hours. I use a meat thermometer to make sure its safe to eat.

PS. Jenny P, I didn't look at your answer. We must think alike.

With a convection over I would cut the temp to 300 degrees Fahrenheit. The time using the convection setting should be about 2 1/4 to 2 1/2 hours. One of the advantages of a convection oven is lower temperature cooking for more moist finishes.

The only real way to tell with turkey is using a thermometer, The temp at the center of the breast should reach 165 degrees F

You can do what chefs of old did and poke it with a skewer and if the liquid runs clear (not bloody looking) ye olde bird is done.

20 minutes a pound is way long and 185 is way to high. What you will have is a very dried out bird

Figure about 20 minutes per pound unstuffed. So, about 3 hours.
