Since part of the Episcopalian is a fascination with the 'Jewish history' of our Christian holidays, you may have a lot that can help these people feel better about your dating their son. Haven't you ever been to a Passover meal right before Easter? Haven't you discussed the ways the Jewish rituals invest the Episcopalian rituals in your church with anyone? Have you ever chanted the 'Great Liturgy' in early December, and do you understand what it means?
As a 'conservative' Jew, your male friend may have 'dietary rules' he must follow, and if you are thinking of ever marrying him, you should ask his mother to help you learn the rules and WHY they are rules, and to help you 'set up' your kitchen. This can lead to other talks about religion between you ... and THAT can be a 'good thing' in the end for you, even if you don't marry this man. Use this opportunity to LEARN and grow, and you will be a much better person in the end.

just be yourself and if its meant to be it will....
you say u have just started dating ,well thats when u must make good first impressions, win them over.
you are lucky that he is conservative (more liberal) and not an orthodox jew.
i would maybe call them up on friday and wish them a good sabath and maybe when u see the mom buy her flowers.take interest in what they do...and also show them u care about there son.
it takes a long time with any relationship to get approval from "his mom" so with this one it might take longer.
good luck

I'd avoid the topic of religion, but naturally, like don't ignore questions. Answer them intelligently. But don't bring up the topic of religion. Just act as though nothing is different. Theyre just people who happen to believe something different

Convert to Judaism.
Other than that, his parents will not approve and the relationship will eventually end.
I am not suggesting you ACTUALLY switch religions for anybody. However, if you are not very religious, you DID ask for a solution.

If it's deeply, truly love then continue the relationship with him and don't take any notice of his parents.
If it really gets to you then talk to his parents (proferrabley his mum) and tell her that you really love her son!

If you are dont mind, I guess that you could change your religion. Unless it is important to you. Then try to research their religion and see it from their point of veiw. Show you have respect! :)
