Aromatic salmon cooked in coconut milk
Serves 4
Preparation time less than 30 mins
Cooking time 30 mins to 1 hour
Ingredients
4 thick salmon steaks
2.5cm/1in piece root ginger, peeled and cut into small, very thin slices
2 large cloves garlic, peeled and cut into small, very thin slices
350g/12oz tomatoes, peeled and halved
1 fresh red chilli, de-seeded and sliced as finely as possible
1 small yellow pepper, de-seeded and thinly sliced
4-6 cardamom pods, roughly crushed
400ml/14fl oz tinned coconut milk
sea salt
2 limes, juice only
handful of fresh mint leaves, chopped
Method
1. Put the fish steaks in a fairly shallow ovenproof dish with a lid, into which they fit quite closely.
2. Scatter the ginger, garlic, tomato, chilli and yellow pepper over and around the fish and the cardamom pods in between.
3. Empty the coconut milk into a separate bowl, add a good sprinkling of sea salt and gradually stir in the lime juice. Pour the mixture gently over and around the fish and cover the dish.
4. Preheat the oven to 150C/300F/Gas 2. Put the dish on the centre shelf and cook for 40-50 minutes, until the fish is lightly done. To discover this insert a small, sharp knife into the centre of one of the steaks - if the flesh is slightly darker pink in the centre it will be perfectly cooked. Remove from the oven.
5. Before serving scatter the mint leaves on top.

The easiest is to place the salmon fillet in a pan, skinside down with a little salt & pepper on it, sprinkle with some dill weed and lay slices of lemon on top. Spritz with a little oil or use butter. Bake at about 375 degrees F for about 20-30 minutes. Only cook until you start seeing the flesh turn pink. If you cook beyond that, then the fish will become dry and crumbly.

I think the simplest way to cook salmon with the best results and the best natural flavour's remaining is to steam it. Steaming is a really good way of cooking lots of things. It makes it impossible to burn anything and stops most foods from loosing all that lovely moisture. Its also a very healthy way of cooking food as no fats or oils are needed. Simply steam the salmon for about 20 mins. Once cooked, try serving it with parsley sauce, its a really good accompaniment.

Mamousou is right. Wrapped in tin foil is easiest and keeps it lovely and moist with the butter and lemon juice. The only other thing to check is the time you cook it for. A whole salmon about 45 minutes, but fillets or steaks15-20 mins max. Fish cooks very quickly and goes tough if it's overcooked. As soon as it flakes easily it's ready. Just test it lightly with a fork.

I spray that 1 cal oil on an ovenproof dish with a lid, put a splash of lemon juice and either parsley or dil on top. Cover and cook in the oven for 15-20 mins

I like to grill it as it is, under a fairly high heat until the edges go brown and crispy. Then I serve it with new potatoes and salad, or flaked over a fairly plain risotto.
Fresh salmon tastes so good you don't have to do anything to flavour it.

what i do is put in tin foil, chop some veg like red & green peppers mushrooms red onion cherry tomatoes , sprinkle with some mixed herbs a little olive oil with your salmon ,and put in oven on about 200,and cook untill your veg is soft and caramellized slightly it takes about 30 mins

My favorite thing to do is marinate it overnight in a mixture of orange juice, soy sauce and grated ginger. Cook at 375 degrees for about 20 minutes.

Well there is four ways
Pan fry it
dust with a little flour and fry turning over for 10 mins
Poach it
Wrap in foil with butter and black pepper and put it in the oven 200 c for 20 mins
Barbecue it
Wrap in foil and cook
Enjoy
