Defense with a weapon yes. But empty handed disarming techniques? Not really. Kali is more of a weapon based fighting art, there's not much defense involved since it follows the "best defense is a good offense" philosophy. It teaches you how to defend yourself using a bladed weapon and how to disarm an armed opponent using your bladed weapon. But as far as going up against an armed opponent using your empty hands, it's as realistic as most other empty handed styles out there, which means luck plays a great part in successfully pulling off a disarm. The only advantage you'll have is that after constantly training with weapons, you're familiar with most of the attack angles and directions and therefore be more prepared compared to someone who hasn't trained with weapons. But if you're going up against a trained knife fighter empty handed, then your chances of disarming him are considerably lower.

Most certainly. Kali is one of the best. As previously stated and well put. Kali does start with weapons first. Once the person gets more skilled they will progress to empty hand.
But like the gentlemen stated already if you are going up against a skilled knife attacker than good luck. It all depends on what your skill level is, how well you can flow, thru different techniques etc... That is one reason why Bruce Lee used so many other techniques from different martial arts there is not one style or technique that is better to use all the time. Just depends on the situation and what it is that you want to accomplish in that situation.
If you are looking to train in Kali Escrima make sure it is a reputable place. Instructors affliated with Dan Inosanto are a great source. Should be able to pull up on google a lot of places that teach if that is where your interest lay. Good Luck and have fun with it.

Yes and Bruce Lee was a recognized user of these skills.
And as stated above, knife and or bladed weapon skills are lethal, in my opinion they are the deadliest of the street skills.
