waitress has to go explain to cooks ..ummm yes the customer wants only romaine lettuce ummmm so can you please pick through one of the salads and get out all the other greens? ummmm thanks "
cook is looking like you are wacked....they dont have time for this bs the foodserver is taking time away from other customers to explain and BEG the cooks to do this ridiculous request....this exact situation happened to me..and unfortunalty that annoying women started being a regular she was known as the lettuce women and no body wanted to wait on her...arrrghhhh give into them once and they will take advantage ...oh and the crazy women who only wanted a half a glass of wine? ummmm sorry we serve only full glasses "well i want half and you will see that i get half and i am only charged for half" arrrggggghhhhhh
no demi glaze i want some bernaise sauce instead...oh ok i will have the chef whip you up some bernaise during our rush ...no problem......arrrghhhhhhh

It could be a number of things, the chefs could be working their asses off and being rushed.........or they could be goofing off. The waiters/waitresses could be knew, not care, or waiting for the chefs, and three.......the customer is the hardest person to please. Some people want their food to be done and waiting for them by the time they get there, or they could be picky, or they could just be grumpy, very seldom do you come in contact with someone who comes into a restaurant happy no matter what happens.

usually it's the customers being snotty a-holes. Occasionally there might actually be something wrong with the food... but usually it's just a jerk of a customer.
