Dead or Alive. Realistic fighting and physics for the most part. It is also fast paced; I cannot stand slow movement.

I'm a fan of the Dead or a Alive series, generally because it's not as much as a button masher as other fighter games are.
It has a very realistic system, and the games always have beautiful visuals.

Marvel vs Capcom 2.
Reasons...
Each character has lots of attacks and combos, cross-over techniques, character switching and assist, a load of unlockable characters, turbo options, is extremly challenging, has wonderful graphics, good play control, humor and can be found on last gen consoles.

Soul Calibur 2.Great Story mode which a lot of other fighters don't have, and really in depth fighting.

My choice is the Tekken franchise, it's deep 3d fighting engine and complex moves meant you weren't going to be button mashing.
