Favorite...depends on the season, the place, and the preparation. FRESH, of course, rules. Perfectly prepared--that also makes something as simple or common as [fill in] as exotic and wonderful as [fill in]. In other words, each type of fish or shellfish can be extraordinary at the right time, in the right hands, with the right preparation. So it's impossible to say since so many factors (who you're with, where you are, what accompanied the seafood, etc.) affect the idea of "favorite." But, often, MY favorites (when I cook them...) are grilled sea bass, smoked ruby trout, perfectly fresh flouder ceviche, grilled and caramelized day-boat scallops, grilled lobster, many kinds of sashimi, sevruga caviar with creme fraiche and champagne...and on and on. Lucky us.
