I primarly use a knife for fresh produce and occasionally meat. So basic as can be...nothing fancy, therefore i'd hate to invest in a cutlery set. I'm just looking for one excellent knife- but i get confused when i look thru sites and stores because they are all sorts of shapes, sizes, have all sorts of names...and i am clueless what I'm actually looking for. What is type of knife should i get?

Buy the best 8 or 10 inch Chef's knife you can afford. If you get a good knife, also invest in a good sharpener for it. I MUCH prefer a straight (not serrated) edge but they do require sharpening. I recommend a good high carbon blade (Chicago Cutlery comes to mind) and a Chef's Choice (ir equivalent) three stage sharpener. You will in this case pay more for the sharpener than for the knife but, unless you are an expert sharpener, it is worth it. A dull $200 knife is worthless while a very sharp $30 knife is more than adequate!!!!

RADA cutlery is the best. not real pricy but comes in multiple sizes so you can pick what size is good for you. all silver and never needs sharpened. i started with one peice and my son bought me the whole set. had them for years and look totally new yet.

I use my Santoku (i think that's how it's spelled) knife for almost EVERYTHING, and before I got that I found that I used my steak knives the most often.

Cutco has excellent knives. I got my mom a couple more for her BD yesterday online at their website.

ANY OF THE FINE GERMAN OR SWISS KNIFES WOULD BE EXCELLENT. FIND ONE THAT YOU ARE COMFORTABLE WITH....TAKE CARE OF IT, AND IT WILL LAST A LIFETIME
