I recently moved into a home with a gas oven dating from probably the fiftgies. Anytime i try to bake, if i let it stay in the oven for the amount of time called for, its toast. With bread or cake and i cut the time in half, its well done on the edges and still very doughy in the center.

The thermostat is probably shot.

Check your oven temperature, sounds like it's hotter then the setting on the thermostat. Most older ovens can be calibrated, but how to adjust it is up to the make and vintage.
Check an on line appliance repair site, they are very helpful.

Get yourself an oven thermometer. About $5 at wal mart. Sounds like the thermostat in the oven is not accurate.

Most ovens can be calibrated by removing the control knob for the oven and in the middle there is a set screw use a meat thermotor to check the temp

Sounds like it is too hot. Try lowering the temperature as well. May be the thermostat is shot.
