anyways, i like mine scrambled...with a bit of chopped ham/sausage mixed in...cheese on top...and a bit of picante sauce....sooo texan! :) lol

Over easy with toast or (if someone really knows how) soft boiled with toast. Over easy is best though.
Or fried in a BLT or on a hamburger.
I do like omlettes though- Here's a recipe for success Darlings and I know you'll be famous once you feed this to someone.
Seafood Omelet
Start you omelet as usual and put in:
Diced scallops (pre cooked- I saute them in butter myself)
King Crab
Cocktail shrimp
A couple of very thinly sliced pieces of turkey (lunch/deli meat is okay)
Some smoked salmon spread- the cream cheese kind
and a light splash of Newburg sauce.
Serve with the Newburg Sauce but let the person who's eating it decide how much they want after they've tasted it.
Dammit, now I'm hungry.

i love eggs. i put milk in the egg yolk (it makes them fluffy) then i scramble them with salt, pepper, chopped garlic, cheese, and chopped tomatoes. yum!
