Same answer as how many cc's can an engine have - how much money do you want to spend?
Here is a production motorcycle with 5700cc http://www.bosshoss.net/view_bike.asp?x=BHC3ZZ4SS
Here is one with 8200cc http://www.gizmag.com/go/6762/
And Dodge built one with 8100cc.

More cc's equals larger engine displacement. More cubic inches is the same thing. Other things being equal, a larger engine which is running properly will normally have more torque, which means it will accelerate faster than a smaller bike, although differences in tuning and engine design can make a smaller bike as fast or faster than a larger one. A larger bike is heavier and therefore should have a larger engine for adequate performance. More cc's does not necessarily mean a faster bike, it is engine design which dictates its torque and horsepower, which are what make a bike faster.

The only limit is weight and size of the engine and the limitation of having only two wheels.
The largest production motorcycle is 2.3 litres, the Triumph Rocket III.
There is also the Boss Hoss with a 350ci Chevy V8 in it.

Have you ever heard of the "Boss-Hoss"? Corvette powered, 5.7 liters. A beast. And still a motorcycle. I've only seen 1 Big Block motorcycle. The owner was 7'11", weighed 400 plus pounds. He said it was too heavy to ride long distance, and a bear to turn.

As big as a person wants. there is now law in America limiting the engine size. I have seen motorcycles custom built with big V-8 car engines in them.

Jay Leno has a two-wheeled beast with a jet helicopter motor in it...don't know what the displacement is, or even how it's measured, but I don't think anyone's had enough stones to get on it and dial it WFO and see what it might actually do...BTW, it has only one gear...but then when the engine "redlines" at 30,000 RPM, why would you need overdrive???K ;o)
