Slim chance is literal, a slim possibility of whatever you are seeking.
Fat chance is more sarcasm. It virtually leaves no room for a slim chance to get by. No way in hell.
I'll take a slim chance over a fat chance any day.

Fat chance means something is very likely but you usually mean it sarcastically so it ends up meaning the same as slim chance, which means something is very unlikely.
