The subunit of a protein is the amino acid. The polymer of amino acids will make up a protein. If the number of amino acids is not enough to form a formal protein then it becomes a polypeptide. The bond between amino acids is covalent but due to the really tight bond it is called a peptide bond.

Protiens are created by a strain of Amino acids created by the syntesis of RNA. The stage between an Amino acids and a protien is a peptide, simply because the bonds between amino acids are peptide bonds. But as a general question, the monomer of a protein is amino acids, the polymer would be peptides.
