Just wondering why I can't seem to find this track listed on i-tunes... any help would be great, thanks!

Because 1) Either, they don't have it. Or 2) You typed it in wrong in the search box. OR 3) It is there, you just overlooked it. Please, try again. If you searched for it and it's not listed then surely common sense would tell you that it's NOT AVAILABLE because if it was available, then it would show up when you search for it.

'The Most Beautiful Girl In The World' can be found on Prince's 1995 album 'The Gold Experience', which is NOT available on iTunes, or any other 'prince collection'. That's why you couldn't find it there. It's NOT available at Amazon downloads or Walmart downloads either. :(
