how do you go about getting the bar certificate? It would be better to oz go for 3 months or longer then?

I do know you need a visa, thats obvious I am asking questions about it to get more info.

You seem not to have looked into this very carefully.
Let me make it quite plain; you can't just turn up in Australia without a visa, whether that is a tourist visa (which absolutely precludes paid employment) or a working visa, and working visas are not available for bar work. You need a skill that Australia needs, and the application process can be quite lengthy and testing.
If you are aged under (I believe) 30 years of age, then there are "young persons working visas" available, and that would enable you to work at anything for up to 3 months with any one employer for the duration of the visa.

Not legally.
I assume that you would be coming on a tourist visa, which absolutely precludes taking any paid employment.

I think you also have to have passed Responsible Service of Alcohol training also, and be over 18.
