combine 3 cups milk,3/4 c uncooked rice ,and 1/2 cup sugar.
Cover and simmer 30 min stir in 1 tsp vanilla extract. chill .
this is very simple and by far one of the simplest recipes for rice pudding . enjoy .

Chocolate Rice Pudding
INGREDIENTS
* 3/4 cup uncooked white rice
* 1 1/4 cups water
* 1 1/2 cups milk
* 1/3 cup white sugar
* 1 teaspoon vanilla extract
* 1/3 cup raisins
* 1 tablespoon butter
* 2 tablespoons unsweetened cocoa
DIRECTIONS
1. In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
2. In the top of a double boiler over simmering water, combine 1 1/2 cups cooked rice, milk, sugar, vanilla, raisins, butter and cocoa. Cook, stirring occasionally, until thickened, 20 to 30 minutes.
A very quick and creamy dessert that can be made with leftover rice from last night's dinner

30-minute rice pudding
Ing:
1 cup arborio or medium-grain rice
5 cups whole milk
1/4 cup raisins
1/2 teaspoon grated orange peel
1/4 vanilla bean, split lengthwise
4 large egg yolks
1/2 cup sugar
Prep:
Place rice in strainer and rinse under cold running water until water runs clear. Place rice, milk, raisins, and orange peel in large saucepan. Scrape seeds from vanilla bean into pan; add bean. Bring rice mixture to simmer over medium heat, stirring occasionally. Reduce heat to lowest possible temperature, cover, and simmer, stirring occasionally, until rice is tender, about 23 minutes. Remove from heat. Add egg yolks; stir until thickened, about 1 minute. Stir in sugar.
Divide pudding among eight 3/4-cup ramekins or custard cups. Chill until cold, about 3 hours. DO AHEAD Can be made 1 day ahead. Cover and keep chilled.
Try replacing the raisins with a different dried fruit, such as apricots. A pinch or two of cinnamon or nutmeg would also be a nice touch.

COOK TIME 30 Min
INGREDIENTS
2 quarts whole milk
3/4 cup long-grain rice
3 eggs
1/2 cup white sugar
1 cup whole milk
1 teaspoon vanilla extract
3/4 cup raisins
1 tablespoon ground cinnamon
DIRECTIONS
Pour 2 quarts milk into a large saucepan and bring to a boil over medium heat. Reduce heat to low, then mix in rice and simmer uncovered for 20 minutes, stirring frequently and skimming surface of milk as needed.
In a medium bowl, whisk together eggs, sugar, milk, and vanilla extract. Slowly pour into rice mixture while stirring vigorously. Allow mixture to boil and thicken, approximately 10 minutes, while stirring constantly.
Remove from heat and stir in raisins. Pour mixture into a 9x13 pan and sprinkle cinnamon over top. Allow to cool uncovered in refrigerator for a few hours, until pudding is chilled and firm. Cover with plastic wrap when cool.

1/4 cup rum or apple juice
3 cups milk
1/2 cup long-grain rice
3 inches stick cinnamon
1/4 cup sugar
1 teaspoon vanilla
Ground cinnamon
Directions
1. In a small bowl combine the raisins and rum or apple juice; set aside.
2. In a heavy medium saucepan combine milk, uncooked rice, and stick cinnamon. Bring to boiling. Reduce heat and simmer, covered, about 20 minutes or until rice is tender. Remove stick cinnamon.
3. Drain raisins; discard rum or apple juice. Stir raisins, sugar, and vanilla into rice mixture. Sprinkle with ground cinnamon. Serve warm or chilled. Makes 3 cups (6 servings).
