Tell the truth:
"My professional knowledge was not used. I want to use it in your field."
If they ask what it is; simply say "If I could recall the law says that one person for six two years olds. If I did work there, I would be breaking the law and putting the two years olds lives in jeapardy. Therefore, I had no other options but to leave. I prefer to work starting with no more than three two years old because I want to be sure that they are well taken care of."

Say you felt unprepared for the responsibility they were giving you. They put you in a position that you didn't feel comfortable with.

Like most things, honesty is the best policy. If asked in an interview, tell the interviewer exactly what happened. (although you may want to tell the interviewer they were very immature, not that they were 2 year olds.)

tell the truth but accentuate the positive and downplay the negative---NEVER LIE, because the new employer will find out and can fire you for falsifying your application.
