Pumpkin pie cake


1 can pumpkin (29 oz)
4 eggs
1 can evaporated milk (12 oz)
1 1/2 cup sugar
2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1 package yellow cake mix
1 c. melted margarine
1 c. chopped nuts
Direction
beat all ingredients except cake mix, margarine and nuts.
Pour in a 9 x 13 pan sprinkle dry cake mix over pumpkin mixture. Pour melted margarine over cake mix and sprinkle with chopped nuts
Bake at 350 degrees for 1 hour no longer. Top with whipped cream if desired.
I am not a fan of fruitcake but this 1 is reallygood




NO BAKE FRUIT CAKE


1, 1 lb. package of vanilla wafers crushed
1 qt. pecans
½ lb each, red, green, candied cherries cut up and use the juice
½ lb golden raisins
1 can sweetened condensed milk (you can add 1 tsp. rum extract to milk before mixing)
Mix all the dry ingredients in a large bowl,
Add milk, mix well, pack into a lined can and chill,
I used a large Tupperware storage bowl with a custard cup upside down in the middle, this way it turned out looking like a fruit cake.
The longer it sits the better it gets.

It's not a traditional holiday recipe, but we always make it for the first time each Christmas. We serve it for dessert along with the fabulous cookies we've made. This was my grandmother's recipe and all of us cousins (her grandkids) make it. The next generation down is also making it now.

Winter Fruit Salad
1 egg
1/2 cup sugar
2 Tbs. cornstarch
2 Tbs. lemon juice
juice from 20 oz. can of pineapple chunks
Cook above together over medium heat until it boils. Cool then add 2 cups Cool Whip and 2 cups mini marshmallows.
Chill dressing covered in refrigerator.

Cut up your choice of canned fruits into bite size pieces. We normally use peaches and/or apricots, pears, and the pineapple from the 20 oz. can. Add fresh red grapes (sliced in half) and bananas. Make sure fruits are well drained. Mix with salad dressing near serving time. Add chopped pecans just before serving or they will turn things dark.

Grandma's recipe called for real whipping cream whipped, but we take the easy way out with Cool Whip.

Hexmix :

All you need is one cup of dark hex cereal, one cup of white witch gruel, 3 eyes of newt, a salamander's tail (fresh is best)
1/2 cup concentrated virgin fat and wormwood embers for heat; mix all ingredients thoroughly in an extra large black cauldron. For an extra "kick" just spike the pot with your favorite hallucinogenic treat. Serve with proper incantation for best results. Store leftovers in a darkened cellar near tangled webs and hidden horrors. Will keep well and is useful throughout the year for funeral buffets and to induce suffering in bedridden old grandfathers and uncles.

My mother, bless her heart for Christmas and the holidays would bake all kinds of cakes from scratch. One of the best though, that was so good was "Japanese Fruit Cakes". Our recipe was different. Grind up juicy oranges, dark raisins, coconut, and walnuts together. Cook your filling and then put the fruit into it, and spead it on the white or butter cake layers. It stays mosit for along time. It was always so yummy!

Shrimp paste:
1 clove of garlic
1 onion
1 bay leaf
1 sprig parsley
salt and peppa
a cuppa white wine
2 pound of shelled shrimp
almost a pound of creamed butta
tiny amount of grated onion
1/2 teaspoon mace
boil the peeled shrimp with the first 8 ingredients, strain,
chop,mix with other ingredients;blending enough butta for a smooth paste.

I would have to say sweet potatos with marshmellows on top.
Its warm, comforting and can be eaten in the morning, afternoon, or dinnertime...it can be eaten as a dessert or a side dish. Also, its not time consuming and very simple to make!
